CALGARY, ALBERTA--(Marketwire - Feb. 7, 2013) - MARKET, a chef-driven restaurant in Calgary, Alberta will open its doors to the public on Saturday, February 9, 2013 at 5 p.m., joining the top ranks of Calgary's diverse culinary scene. MARKET's philosophy lays in serving authentically local, seasonal and fresh-from-the-farm ingredients from as close as their own kitchen, but no further than neighbouring provinces.
Located at 718 17th Avenue S.W., MARKET was conceptualized by owner Vanessa Salopek and Executive Chef Geoff Rogers. Together they have created a market-fresh cuisine concept where the quality and taste of the food served can be controlled by making their bread and cheese in-house, butchering their own animals, and growing their own greens and herbs in-house with Calgary's first commercial Urban Cultivator, an internal home garden.
"Food has always been my passion, and dining out my favourite pass-time - my hobby if you will," says Salopek. "I see eating not as a mechanical action, but as a leisurely pursuit. I knew I wanted to open a restaurant at a young age because to me, there is no greater pleasure than providing someone the opportunity to enjoy a great meal with great friends."
MARKET believes in knowing where their food comes from and how it finds its way to the kitchen. If a quality ingredient cannot be made in-house, MARKET sources it locally from within the region. If they can't find it regionally, they thoughtfully source it from ethical and sustainable partners.
"For us, 'local' and 'sustainable' are more than just buzz words of a current food trend," said Geoff Rogers, Executive Chef at MARKET. "It's a way of life - we believe in honouring simple, humble ingredients from within our own region and elevating them with advanced and innovative cooking techniques. My cooking philosophy is to look to the past before we look to the future, paying homage to our community, culture and heritage."
MARKET features an open kitchen concept, offering guests interaction with the chefs. Guests can expect modern, intelligent fine dining food in an approachable, relaxed environment.
MARKET's team is composed of talented culinary experts including Dave Bohati, formerly from RUSH as the Chef de Cuisine, and Yvan Toulouse and Rebecca Davis formerly from CHARCUT, as the general manager and mixologist, respectively. MARKET will be open seven days a week from 11:30 a.m. until late.
