These strains, produced by selective breeding and screened for H2S-prevention as well as low SO2 production, have also undergone independent evaluations at wineries that have not only confirmed these features of Phyterra™ yeast strains but have also showed a consistent improvement in sensory characteristics (i.e. more pleasant and flavorful aromas and tastes) in wines produced with Phyterra™ yeast.
The Company's proprietary H2S-preventing wine yeasts provide winemakers with a seamless solution to prevent and reduce the sensory defects (e.g. a distinct, noxious rotten-egg smell) associated with H2S, a gas naturally emitted as a byproduct of fermentation that represents a well-recognized, widespread industry problem and which can lead to a potential devaluation of wine.
