CALGARY, ALBERTA--(Marketwire - Oct. 10, 2012) - Big Rock Brewery Inc. (TSX:BR) - Ambrosia Wet Hop Ale is the first brew released in Big Rock's newest series, the Alchemist Edition. This keg-only brew is made with fresh Cascade hops from Washington's Yakima Valley. These aromatic cones were picked from the vine, packed on dry ice, flown to Calgary and put into our brew kettle in less than 24 hours. The result? A seasonal, draught- only brew that just might be the freshest-tasting beer we've ever made.
"Wet hopping is a rare technique used to produce beer using fresh un-kilned hops," says Big Rock's Brewmaster Paul Gautreau. "Ambrosia is a mouthful of an almost grassy hop flavour without the expected hop bitterness." Paul was so excited tracking this precious cargo of wet hops that he barely slept the night they were being transported to Calgary. "It was a tough one to pull off but I'm very excited with the results," says Gautreau.
Wet hop beers are only brewed once a year immediately following the annual hop harvest in late summer or early fall. These fresh hops need to be added to the brew kettle within hours of being picked to reduce spoilage and maintain freshness. Hops are typically dried and processed before they are sent to brewers which make using fresh hops in the brewing process more complex. Wet hop beers taste very fresh, are less bitter and have an intense hop flavour. Quite simply, fresh hops beers are delicious.
